Ingredients
2 large salmon filets or 4 small - skin on
1 Tbsp olive oil
1 pinch sea salt
1 pinch of black pepper
2 Tbsp freshly chopped dill (or just a sprinkle of dried)
1 small lemon sliced into skinny circles
1/4 cup yogurt
2 Tbsp lemon juice
2 Tbsp freshly chopped dill (or just a sprinkle of dried)
1 (or more) cloves garlic, minced
Water (optional)
Instructions
Preheat oven to 400 degrees F, or 204 C. Prepare baking sheet, line with parchment paper.
Rinse fish.
Once dry, drizzle both filets with a tad of oil and sprinkle salt and pepper. Next sprinkle on dill and place lemon slices on fish.
Transfer seasoned salmon directly to the parchment paper-lined baking sheet and bake for about 12-15 minutes, or until the center is cooked - and you've checked it. Set aside.
In the meantime, prepare sauce by adding yogurt, lemon, dill, and garlic to a small mixing bowl and stirring to combine. Then add water (optional) a little at a time until a sauce is achieved at the consistency of your preference.
Drizzle sauce and serve.
