Ingredients
2 Tbsp coconut oil
1 cup finely sliced onion
3 Tbsp fresh chopped ginger
Touch of black pepper
2 pinches of sea salt
1 cup chopped red bell pepper
8 medium potatoes
Instructions
Heat a large skillet, or pan, over a medium flame. Once hot, add oil, onion, ginger, black pepper and sea salt. Saute for 3 minutes. Onions should become slightly translucent.
Add the red bell pepper and a tad more salt. Saute for 3 more minutes.
Add the potatoes and another little pinch of sea salt.
Mix well.
Reduce heat and saute for about 20 minutes stir occasionally as ingredients should not stick.
Serve as a side to a veggie filled lunch, or dinner.
